Candied Lemon Peels

Ingredients

Lemons
8 cups
Cold water (possibly more if needed, divided)
2 cups
White sugar
Step by Step Instructions
- Cut the lemon into 1/4 inch thick rings, then remove the fruit pulp (retain for other uses, if desired). Cut the rings in half to make long strips to work with.
- Put the water and lemon rind strips into a pot and bring it to a boil. Drain the water, and repeat twice more.
- In a new pot, combine the sugar with 2 cups of water. Bring to a boil, and stir to dissolve the sugar. Reduce to low heat, then stir in the lemon peels. Simmer until the white pith is translucent.
- The peels may either be stored refrigerated in syrup, or dried, tossed with additional sugar, and stored in an airtight container.
